* Passover* Kiss Your Cardboard Cakes Goodbye !



I know what your thinking .. a passover cake that doesn`t taste like saw dust ?? Well its true ! Jacques Torres`s Easy FLOURLESS chocolate cake. No flour so this cake is more than passover friendly.

Ingredients:

6oz bittersweet chocolate (finely chopped)
6oz unsweetened chocolate (finely chopped)
6oz sugar
5oz water
6oz butter (softened) about 11/2 sticks
6 eggs
3oz sugar


Recipe:
- Preheat the oven to 350 degrees and spray 1 10" spring form pan. Line the bottom of the pan with parchment paper. ( wax paper works just as well)
- Melt finely chopped chocolate over a double boiler
- In a bowl bring sugar and water to a boil until the sugar is dissolved, pour the hot syrup into the melted chocolate, whisk until combined, add butter and mix until combined.
- In a mixer beat eggs and sugar until well blended, gently fold in the chocolate mixture
- Pour batter into prepared cake pan and place onto a baking sheet 1 " . Fill sheet with water and submerge cake just so the sides are covered.
- Bake about 40 or until the top is dull colored

Whole Wheat Banana Muffins !!


Ingredients:

2cps whole wheat flour
11/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon
3 lg bananas mashed
2 lg eggs
1/2 cp maple syrup
1/2 cp light brown sugar
1/3 cp milk
1/4 cp canola oil
1 tsp vanilla

Recipe:

- Preheat your oven to 350 degrees
- In a medium bowl mix flour, baking powder, baking soda, salt and ground cinnamon.
- In another larger bowl combine the mashed bananas, eggs, syrup, brown sugar, milk, oil, and vanilla.
- Lightly fold the wet ingredients into the dry just until combined .. Lumpy is okay. DO NOT overmix !!
- Bake for about 20 minutes and let rest for 10 minutes.

Chocolate Chip Coconut Cookies !


So i was really hankering for something that was baked and delicious
but did not have a lot of calories, so I came up with these cookies, they are
just regular cookies, however i changed them up to be more health conscience.
Hope You Like Them !

Ingrediants:

21/4 cp Whole Wheat Flour
1t baking soda
1t salt
1cp butter or margarine ( softened )
3/4 cp splenda
3/4 cp brown sugar
1t vanilla
2 eggs
1cp chocolate chips
1cp coconut

Method:
- combine flour, baking soda, and salt in a small bowl. Beat butter, sugar, brown sugar and vanilla in a large mixer until creamy, about 2 minutes. Add eggs one at a time, beating well after each addition. Gradually add in your flour mixture, stir in your chocolate chips and coconut. Drop by rounded tablespoon onto ungreased baking sheets.
- Bake at 375 degrees for 9 to 11 minutes or until golden brown. Let cool on baking sheets for about 2 minutes and then move to a wire rack.

Black And White Cupcakes Compliments Of BOB







Black And White Cupcakes


Ingrediants:

8oz cream cheese, softened
1 lg egg, at room temperature
1/3 cp plus 1 cp granulated sugar
1 cp miniature choc. chips
11/2 cps AP flour
1/4 cp unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cp warm water
1/3 veg. oil
1 tbs apple cider vinegar
1 tsp vanilla extract


Method:

- Preheat oven to 350 degrees, line 2 12- cup muffin tins with cupcake liners.
- Beat cream cheese , egg, 1/3 cp of sugar on medium speed until light and fluffy. Stir in choc. chips and set aside.
- In a large bowl, combine flour, 1 cp sugar, cocoa powder, baking soda, and salt. Make a well in the center, and add water, oil,vinegar, and vanilla. Mix just until blended.
-Fill each muffin cup one- third full with the choc. batter. Top with a spoonful of cream cheese mixture, until the cups are about two thirds full. Bake 22 to 28 minutes, until the tops spring back lightly when touched.
-Cool in pans for about 1o minutes, move to a wire rack.

Thats MISS Doughnut to you !






Today in my baking 2 class we made yeast - raised doughnuts, they are amazing !

Recipe:
1lb water
1.5 oz yeast
3 oz shortening
4 oz sugar
0.5 oz salt
0.09 oz mace
1.5 oz non fat milk solids
4 oz eggs
1lb 13oz bread flour

Method:
Mixing - Modified straight dough method. Develop the dough completely, about 6 -8 minutes on second speed.
Fermentation - About 11/2 hours at about 80 degrees.
Scaling - 1.5 oz per unit
Frying - 375 degrees, when the doughnuts are friend, lift them from the grease and let excess drip off. Place on parchment paper until cool.

Nana Cheesecake







Best Cheesecake Recipe Ever !! (By: Joan Hesch <3)

Filling : 2lbs cream cheese (softened)
11/4 cp sugar
6 eggs
1 tbsp melted butter
1 tbsp flour
1 tbsp vanilla extract
1 cp sour cream

Crust : 1/2 box nilla wafers (crushed)
11/2 tbsp melted butter
1 tsp sugar


Filling : Mix cream cheese and sugar, add remaining ingredients and mix well. Pour into a spring form pan and bake at 300 degrees for one hour. Turn off oven and leave cake for 1 hour.
Crust : Combine ingredients in bottom of pan and press firmly into pan. Pour in batter.

After baking let cool for at least 2 hours. ( refrigerate)

Bakery Review !!



Today I was privileged to interview Owner and Baker Thomas Shipley of the new bakery in Bellmore, The Cake Gallery.
After trying a couple of Thomas`s delicious treats and cakes, I thought I might let you guys know how his stuff is. I personally have tried a Blondie, Brownie Cheesecake as well as a Birthday Cake. All three were amazing, The birthday cake had yellow cake, chocolate fudge as the filling and chocolate mousse as the "frosting". I must say I am not that old but in the couple of years of me being involved with baking and pastry I have not tasted anything this good in a long while. His cakes are extremely well priced starting from $10.50 and up.
During the interview I asked a couple of questions about our new Bellmore Baker .. Such as
why Thomas wanted to become a baker. He told me he actually did not want to become a baker at first, he wanted to be a gym teacher, or a rock star, but he always went back to baking because he was good at it. Although he did not get any formal baking and pastry training Thomas worked at Riesterer`s Bakery in West Hempstead for many years where he obtained much knowledge about his profession. He also taught at The Culinary Institute Of America, for those of you who don`t know what that is, it is pretty much the Harvard of Culinary Schools.
Thomas went on to tell me that one of his favorite cakes he has ever made was his very own wedding cake, as well as his daughters 1st birthday cake.
The Cake Gallery is a great addition to our town and i suggest everyone go to try it.
