Today in my baking 2 class we made yeast - raised doughnuts, they are amazing !
Recipe: 1lb water 1.5 oz yeast 3 oz shortening 4 oz sugar 0.5 oz salt 0.09 oz mace 1.5 oz non fat milk solids 4 oz eggs 1lb 13oz bread flour
Method: Mixing - Modified straight dough method. Develop the dough completely, about 6 -8 minutes on second speed. Fermentation - About 11/2 hours at about 80 degrees. Scaling - 1.5 oz per unit Frying - 375 degrees, when the doughnuts are friend, lift them from the grease and let excess drip off. Place on parchment paper until cool.
